Finger Lime Mojitos

This year we are adding a native twist to the traditional mojito for our staff Christmas celebration. Here are the steps for 2 standard drinks:
Ingredients
- 1 lime, cut into 16 pieces, plus more for garnish
- 1 finger lime - cut in half and fruit squeezed out
- 16 fresh mint leaves, plus sprigs for garnish
- 2 tablespoons superfine sugar
- 1/2 cup white rum
- Soda Water
Instructions
In a bowl place the lime pieces, mint leaves, and sugar. Using a muddler, mash the lime pieces and bruise the mint leaves while dissolving the sugar. Scoop into 2 glasses and add enough chipped ice to each glass to fill. Add 60ml of rum to each glass, then top with soda water. Sprinkle a teaspoon of finger lime. Garnish the glasses with lime and mint sprigs and serve with a paper straw.
